I just ran across this post by Nick Mackechnie (click here to see the full post) were he has combed the web (ok, the Microsoft training site) and found all of the Windows Server 2008 related training, some released, some beta, some that cost, some that are free.
For the sake of your time, I am pulling out the link to the Virtual Labs and the free Web-based courses (shown below), but if you have the time, you should look at his entire listing, it's more than I would have expected.
